Apostrophes are for marking possession, eg. Bob's poems, or contractions, eg. Aren't Bob's poems funny! You don't need them for plurals. Basically, they stand for letters omitted. The 's represents an ending for nouns in the possessive - or genitive - case, which used to exist in English but has fallen out of use. For example god's kingdom would have been godes kingdom.
